Introduction of Kadai Paneer

Kadai Paneer is a popular North Indian dish that's known for its rich and robust flavors. This vegetarian delight features paneer (Indian cottage cheese) cooked with a blend of aromatic spices and bell peppers in a unique, deep, and round-bottomed kadai (wok). The result is a delightful, semi-dry curry that's perfect for any occasion. In this blog, we'll guide you through the process of making this delicious dish from scratch.

Ingredients For the Kadai Masala:

  • 2-3 dried red chilies
  • 1 tbsp coriander seeds
  • 1 tsp cumin seeds
  • 4-5 black peppercorns
  • 2-3 green cardamom pods
  • 2 cloves
  • 1-inch cinnamon stick
  • 1 bay leaf

For the Kadai Paneer:

  • 250g paneer (cubed)
  • 2 tbsp vegetable oil
  • 1 onion (finely chopped)
  • 1 green bell pepper (capsicum, thinly sliced)
  • 1 red bell pepper (capsicum, thinly sliced)
  • 2 tomatoes (pureed)
  • 1 tsp ginger-garlic paste
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder (adjust to your spice preference)
  • 1 tsp coriander powder
  • Salt to taste
  • Fresh coriander leaves (for garnish)
  • 1/2 cup water

Method:

Step 1: Preparing the Kadai Masala

Heat a pan over medium heat and dry roast all the ingredients listed under "Kadai Masala" until they release a pleasant aroma. This should take about 2-3 minutes.

Allow the roasted spices to cool down and then grind them into a fine powder using a spice grinder or mortar and pestle. Set the kadai masala aside for later use.

Step 2: Cooking the Kadai Paneer

Heat 2 tablespoons of vegetable oil in a kadai or a deep skillet over medium-high heat.

Add the finely chopped onions and sauté until they turn translucent.

Stir in the ginger-garlic paste and cook for another minute until the raw smell disappears.

Add the sliced green and red bell peppers and sauté for 3-4 minutes until they start to soften.

Pour in the tomato puree and cook for 4-5 minutes until the oil begins to separate from the mixture.

Add the turmeric powder, red chili powder, and coriander powder. Stir well to combine the spices with the tomato mixture.

Now, add the kadai masala you prepared earlier. Mix everything thoroughly, allowing the spices to infuse with the other ingredients.

Reduce the heat to low and add the cubed paneer. Gently stir to coat the paneer with the flavorful sauce.

Pour in 1/2 cup of water and season with salt to taste. Stir well and cover the kadai with a lid. Let it simmer for 5-7 minutes, allowing the paneer to absorb the flavors of the sauce.

Once the sauce thickens, and the paneer is cooked through, turn off the heat.

Step 3: Garnish and Serve

Garnish your Kadai Paneer with freshly chopped coriander leaves.

Serve this flavorful dish hot with naan, roti, or steamed rice.

Additional Information:

Kadai vs. Karahi: The dish is named after the utensil in which it is traditionally cooked, a kadai (or karahi), which is a deep, circular, and thick-bottomed wok-like pan. Using a kadai imparts a unique smoky flavor to the dish.

Spice Level: Adjust the amount of red chili powder to your personal preference. If you like it milder, reduce the amount, and if you prefer it spicier, increase it.

Vegan Option: You can make a vegan version of Kadai Paneer by substituting tofu for paneer and using vegan butter or oil for cooking.

Variations: Feel free to customize your Kadai Paneer by adding vegetables like mushrooms, peas, or even cashew nuts for extra texture and flavor.

In conclusion, Kadai Paneer is a delightful and aromatic Indian dish that's a hit at dinner parties or a cozy family meal. It's easy to make and allows for creative variations, making it a favorite among both vegetarians and non-vegetarians alike.
